So I only sync a few key files to new devices, primarily my documents folder and a folder of notes. It's about five gigabytes of data and generally takes less than 20 minutes to download.

Check the box next to "Sync Google Docs, Sheets, Slides, and Drawings to this computer." This will save editable versions of your Drive files to your computer.
